Dry Aging at Hide

Dry ageing is one of the ways we enhance exceptional Australian beef.

Selected cuts are carefully dry aged to naturally develop greater depth of flavour, tenderness & character before being cooked over natural mallee charcoal. The fire enhances the natural qualities of the beef, creating a steak that is rich in flavour and true to it’s origin.

Its a philosophy built on patience, craftmanship and respect for great Australian beef.

Sârn’s love for food began in her childhood kitchen, baking alongside her Mum every Sunday in Adelaide. What started as a family tradition soon became a lifelong passion for bringing people together through food.

Cooking and caring for animals were her two great passions. Sârn began her career in hospitality before fulfilling a lifelong dream of working in the Veterinary Industry. Over the next 13 years, she became Head Veterinary Nurse & earned a Diploma in Emergency & Critical Care. Working alongside veterinarians & local livestock producers, she developed a deep appreciation for Australian agriculture, animal welfare, nutrition and the people behind the food we eat.

Drawn back to the kitchen, Sârn returned to hospitality with a renewed appreciation for exceptional produce and the stories behind it. She has since become a familar face in Wagga Wagga’s dining scene, honing her craft in some of the regions most respected kitchens including The Roundabout Restaurant, Meccanico Espresso & Wine and Pastorale by Meccanico. She also shares her passion for cooking as one of the chefs at Food I Am, inpiring others to discover the joy of great food.

After leading the kitchen at Hide Steak & Bar for several years, Sârn and her husband Darren took ownership with a shared vision of creating a restaurant built on exceptional Australian beef, genuine hospitality and a place where every guest feels welcome.

Inspired by her travels and a love of authentic local food, Sârn has explored everything from Singapore’s bustling hawker centres and hidden tapas bars in Spain to Michelin starred restaurants across Europe. Those experiences continue to shape Hide’s evolving menu, while always staying true to the incredible produce of the Riverina.

Whether she’s refining the dry-ageing program, mentoring young chefs or creating a dessert with a touch of theatre, Sârn believes the best dining experiences are built on care, generosity and connection.

Darren Rudd
Director/Owner

Darren is the quiet force behind Hide Steak & Bar. While much of his work happens behind the scenes, his influence can be felt in every part of the restaurant…from the drinks list and warm welcome to the relaxed atmosphere that makes guests feel at home.

Service has always been at the heart of Darren’s life. After serving in the Royal Australian Air Force, he persued a career as an Intensive Care Paramedic, a role that he continues to love today. The values that have guided him throughout his career…compassion, integrity and caring for others…are the same values that underpin Hide.

A passionate whisky enthusiast with a love of great wine and cocktails, Darren carefully curates Hide’s beverage offering & is always searching for producers & flavours that compliment the food coming from the kitchen.
